Product formulation is a sensitive but decisive stage in the product development process. R&D teams optimize product development taking into account raw materials’ attributes and limitations as ingredients, any associated health risks and, most importantly, costs to develop a new product. Part of their role is also to gather all product information and ensure it remains accurate for all those involved both internally and externally for audits.
Many different aspects need to be included from the very first stage of new product development. R&D teams work within strict frameworks including regulations (USDA/FDA, EU 1169/2001, EC No. 1223/2009) and standards (CODEX Alimentarius), norms, nutrition statements, allergens, and marketing briefs related to customers’ expectations. Meanwhile, company profitability cannot be overlooked, taking into consideration and evaluating how production costs are affected by raw materials or production processes.
